Lambiek Fabriek is coming to Hopwaarts
No Brett, No Glory: at Lambiek Fabriek from Sint-Pieters-Leeuw, everything revolves around spontaneous fermentation, oak and patience. Hopwaarts is bringing their geuzes, krieks and fruit lambics to the Dutch drinks trade.

Lambic from just outside Brussels
Lambiek Fabriek was founded in 2016 and is based in Sint-Pieters-Leeuw, a stone's throw from Brussels. The brewery is a member of HORAL, the High Council for Artisanal Lambic Beers. Its motto says exactly what matters: No Brett, No Glory. Brett is short for Brettanomyces, the wild yeast that gives lambic its character.
Spontaneous, oak-aged, unfiltered
It all starts with lambic that ferments spontaneously and matures in oak barrels. Oude Geuze Brett-Elle is an unfiltered blend of the brewery's own lambics of one, two and three years old. Natur-Elle is the organic geuze: refermented in the bottle, unfiltered and unpasteurised. For something stronger there is Bord-Elle, an Oude Geuze of 10.5%.
Every beer an Elle
The names show how much fun they have making these beers. Jart-Elle is an Oude Kriek that spends six months on fresh sour cherries, while Schar-Elle is made with Schaarbeek cherries. In the Juicy & Wild range the lambic macerates with fruit: blackcurrant in Black Belle, rhubarb in Rhub-Elle, six kinds of fruit in Pluri-Elle and grapes from Belgian Limburg in Muscar-Elle, Blue-Belle and Soleille. Colon-Elle matures in Gouden Carolus whisky barrels.
